  • 2 cups shredded cheddar cheese (you can use a mix of mild and sharp cheddar)
  • 1/2 cup plain Greek yogurt or pureed cottage cheese
  • 1/2 cup milk (any type you prefer)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/2 cup breadcrumbs for topping

Instructions:

  1. Cook the macaroni: Cook the macaroni according to the package instructions until al dente. Drain and set aside.
  2. Steam the veggies: In a steamer basket or microwave-safe container, steam the cauliflower, carrots, and butternut squash until they are tender.
  3. Blend the veggies: In a blender or food processor, blend the steamed vegetables until smooth. You can add a splash of water if needed to achieve a smooth consistency.
  4. Make the cheese sauce: In a medium saucepan, combine the blended veggie mixture, shredded cheddar cheese, Greek yogurt (or cottage cheese), milk, garlic powder, onion powder, salt, and pepper. Cook over medium heat, stirring frequently, until the cheese is melted and the sauce is creamy.
  5. Combine the sauce and pasta: Add the cooked macaroni to the cheese sauce and mix well to coat the pasta evenly with the sauce.
  6. Optional breadcrumb topping: If desired, you can sprinkle breadcrumbs on top of the mac and cheese for a crispy texture. You can either toast the breadcrumbs in a separate pan or in the oven and then sprinkle them over the mac and cheese.
  7. Serve: Dish out the creamy hidden veggie mac and cheese into bowls and serve immediately.
